BBQ Chicken Quesadillas

Ingredients
  

  • 2 cups Cooked and shredded boneless, skinless chicken breast
  • 1/2 cup Low-calorie barbecue sauce
  • 4 Whole wheat, high fiber tortillas
  • 1 cup Reduced-fat shredded Mexican blend cheese
  • 1 small Red onion (diced)
  • 1/4 cup Cilantro (chopped)
  • Nonstick cooking spray

Instructions
 

  • Spray a skillet with nonstick cooking spray and warm over medium heat.
  • Mix the chicken and barbecue sauce together.
  • Scoop 1/4 of the BBQ chicken onto half of each tortilla.
  • Top each portion of chicken with cheese, red onion and cilantro.
  • Fold the tortillas in half and place in the prepared skillet. Cook each quesadilla for 3 minutes and then flip and cook for an additional 2 minutes, until golden brown.
