2cupsCooked and shredded boneless, skinless chicken breast
1/2cupLow-calorie barbecue sauce
4Whole wheat, high fiber tortillas
1cupReduced-fat shredded Mexican blend cheese
1smallRed onion(diced)
1/4cupCilantro(chopped)
Nonstick cooking spray
Instructions
Spray a skillet with nonstick cooking spray and warm over medium heat.
Mix the chicken and barbecue sauce together.
Scoop 1/4 of the BBQ chicken onto half of each tortilla.
Top each portion of chicken with cheese, red onion and cilantro.
Fold the tortillas in half and place in the prepared skillet. Cook each quesadilla for 3 minutes and then flip and cook for an additional 2 minutes, until golden brown.
