Ingredients
- 2 cups Cooked and shredded boneless, skinless chicken breast
- 1/2 cup Low-calorie barbecue sauce
- 4 Whole wheat, high fiber tortillas
- 1 cup Reduced-fat shredded Mexican blend cheese
- 1 small Red onion (diced)
- 1/4 cup Cilantro (chopped)
- Nonstick cooking spray
Instructions
- Spray a skillet with nonstick cooking spray and warm over medium heat.
- Mix the chicken and barbecue sauce together.
- Scoop 1/4 of the BBQ chicken onto half of each tortilla.
- Top each portion of chicken with cheese, red onion and cilantro.
- Fold the tortillas in half and place in the prepared skillet. Cook each quesadilla for 3 minutes and then flip and cook for an additional 2 minutes, until golden brown.
